Italian Cuisine Delight: Chicken Parm With Fresh Mozzarella Recipe

Chicken Parmesan is an age-old favorite that delights both children and adults. Pair it with crispy garlic bread and a fresh salad and you have the perfect meal for the whole family.

For The Breaded Chicken Cutlets

  • 4 chicken cutlets (6 ounces each, 1 1/2 pounds total), pounded to 1/2 inch thick
  • Kosher salt
  • Freshly ground black pepper
  • 1 large egg
  • 1 tablespoon all-purpose flour
  • 1 cup plain Breadcrumbs
  • 2 tablespoons freshly grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1 teaspoon finely chopped Italian (flat-leaf) parsley
  • 4 tablespoons extra virgin olive oil

For The Chicken Parmesan

  • 1/2 cup Perfect Marinara Sauce
  • 3/4 cup shredded fresh mozzarella cheese
  • 5 or 6 basil leaves, torn into 1/2-inch pieces

Set a rack in the middle of the oven and preheat the oven to 400ºF. Line a plate with paper towels.

Follow These Instructions For The Perfect Breaded Chicken Cutlets

  1. Lightly season both sides of the cutlets with salt and pepper. Place on a baking sheet or platter and set aside.
  2. In a wide, shallow dish, whisk the egg. Add the flour and continue whisking until fully incorporated. In another wide, shallow dish, combine the breadcrumbs, Parmesan cheese, garlic powder, parsley, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper. Mix well.
  3. Dredge a cutlet in the egg mixture, gently draining any excess, then dip in the seasoned breadcrumbs, pressing it until completely coated. Return the cutlet to the baking sheet. Repeat with the remaining cutlets.
  4. Heat 2 tablespoons of the oil in a large nonstick skillet over medium heat. When the oil is shimmering, place 2 of the cutlets in the pan. Cook until golden brown, 2 to 3 minutes. Flip and cook until brown on the other side, an additional 2 to 3 minutes. Transfer the chicken to the paper towel–lined plate to drain any excess oil. Wipe the pan clean with paper towels and repeat with the remaining oil and chicken.

For The Chicken Parmesan

  1. Place the cutlets on a rimmed baking sheet. Top each cutlet with 2 tablespoons of the marinara sauce and 21/2 tablespoons of the fresh mozzarella cheese. Bake for 5 to 7 minutes, until the cheese is melted. Change the oven setting to broil and cook for a few minutes more until the cheese is bubbling and beginning to brown.
  2. Garnish with the basil and serve hot.
